Thanks, Peggy! We love having our own homegrown veggies. As far as the garlic, this is our first year growing the elephant garlic. It is milder than regular garlic so I tend to use more of it in cooking. We had some small bulbs that were only 1-bulb cloves, just one round clove without any divisions. I treated it like an onion, slicing it up and saute'ing it.
Elephant garlic can also be used in the lactofermented veggies as a flavoring. Just slice some up or use whole and put in the bottom of your jar or mixed within the layers of veggies.
I am a musician, organic gardener and improvisational cook. Following the birth of my child, I developed many symptoms and deep exhaustion. What are some uses for elephant garlic? Is it used exaclty like ordinary grocery store garlic?
